VIDEO: Creating a Soy-Based Chicken Alternative

MU researcher Fu-hung Hsieh set out with one question in mind: is it possible to create a healthy, eco-friendly alternative to chicken? The answer was ‘yes.’ Hsieh’s partnership with fellow MU researchers resulted in the creation of innovative soy-based chicken strips that have the texture and taste of real meat. Not only did Hsieh succeed at creating an intellectual property at Mizzou, his product is now available for consumer consumption at markets throughout the United States.
